If you prefer to make steamed fish, you can use fillets, or you can cook it whole if it fits in a steamer. Because steamed fish has a mild flavor, it’s easy to season it with spices like lemon, ginger, and soy sauce. Try to find your favorite steamed fish combination.
.Boil a pot of water on the stove. Pour half a cup of water into the pot and turn the heat to high. Put a lid on the pot so the water boils faster. Once the water boils, you will see steam escaping from under the lid. The bamboo steamer basket should fit snugly on top of the pot.Make sure the bottom of the steamer does not touch the water.
.Sprinkle both sides of the fillet with salt and pepper. Place 340g fillets on a cutting board and sprinkle with salt and pepper. Turn the fillets over and add more salt and pepper to taste. Use any kind of fish. For example, you could try salami, cod, halibut, branzino or sole. You can steam a whole fish in a steamer, as long as it fits.
.Place the fish fillets on a plate, top with lemon, chili and ginger. Take out a heat shield that fits inside the steamer basket. Arrange the fillets on top and top each fillet with 1/2 slice of lemon and 1/2 slice of red pepper. Then, spread 1/2 tablespoon (3 grams) grated ginger over each fillet. You can season the fillets however you like. For example, you can use ginger soy sauce.
.Put the plate into the steamer basket and place it over the pot of water. Place the seasoned fish on a plate and place the lid on the steamer basket. Place the entire steamer basket over a pot of boiling water.
.Steam over medium heat for 8-10 minutes. Turn the burner down and let the water boil under the steamer. Heat fish until opaque and cooked through. To test whether the fish is done, drag the tines of a fork through the center of the fillet. It should come off easily. If not, steam for another minute and check again. If you like, you can steam the fish in a bamboo steamer, either using fish fillets or putting the whole fish in the steamer.
